Pear cake کیک گلابی

این کیک ساده و سبک برای عاشقان کیک که رژیم دارند توصیه میشه.
ترکیبات: گلابی سفت تازه  4 پیمانه خرد شده، آرد 3پیمانه ،تخم مرغ 2 عدد، روغن مایع 1 پیمانه، شکر 1 پیمانه، بکینگ پودر 1 ق غ، دارچین  2 ق غ، وانیل 2 ق غ

گلابی ها را پوست بگیرید و درشت خرد کنید و با شکر مخلوط کنید و برای 0.5 ساعت رها کنید. الآن باید گلابی ها آب انداخته باشند. آرد و آب لیمو و کره را اضافه کنید همراه با روغن
 خمیر پیراشکی مخصوص
.این خمیر بسیار لطیف است و بسیار آسان تهیه می شود.

Piroshki or Pie dough
Ingredients: 2.5 cups of all purpose  flour, 2 sticks of butter(250 gm),  1/4 cup water
This recipe is the easiest for Piroshki or Pie dough. All the materials should be cold.
1. Chop the cold  butter in small pieces.
2. Sift the flour and mix the butter with it in the food processor.(Just 2 pulses)
3. Now you have a soft mixture and you can see butter pieces in it which makes it fluffy.
4. Divide the dough into two portions.
5. Make a ball out of the dough and flat it with  a pin.
6. Cover it with plastic and set in the fridge for an hour.
7. Now you have your dough ready for Piroshki or apple pie.

Yogurt and cucumber:(ماست و خیار)
This is a favorite snack in Iran usually served with potato chips.
Ingredients: 1 lb of Plain or whole yogurt, 1 lb Persian cucumber, 1/4 lb raisin, finely diced walnut if you like, Topping:Spearmint, dried rose petals

1. Chop the cucumbers in very small pieces.
2. Add them to yogurt and mix well.
3. Add salt and pepper.
4. Top it with spearmint and dried rose petal if you have.

Piroshki(پیراشکی)
Ingredients: Tortillas, 4 potatoes, 0.5 pound beef frank, 3 blend cheese( Mexican,goda,mozzarella), dried dills, Ketchup or Tabasco sauce.

1. Cook potatoes in water. Peel and let cool down and Smash.
2. Chop franks in small pieces.
3. Now you can preheat oven on 350F.
4. On a tortilla, add 3 tbs of smashed potatoes and 2 tbs of franks.
5.Add cheese as much as you like.
6. Top it with some dried dills.(Not too much)
7.Now you should have the stuffing on 1 side of the tortilla.
8.Wrap the tortilla and close the edges using some water on your hands.
9. Brush some egg yolks on the outer surface to get a golden piroshki.
10. Put a parching paper on the oven tray and grease it.
11. Roast them in the oven(350 F)  for 15 minutes.
12. Check on them meanwhile to make sure it is not over roasted.
13. Serve them as seen in the picture. Put Ketchup or Tabasco sauce in the middle.



Eggplant Stew
Ingredients: 2 lbs of eggplants, 1 lb of tomatoes, 1 medium green pepper, 1 large onion, 1 lb of chicken breast, lemon juice, saffron, tomato paste, 1 cup of french fried onion
This stew is one of the most favorite Persian dishes. you can use Asian eggplants if you want a better taste!
1. Peel the eggplants and leave the hat on it! (It will keep its shape)
2. Cut the eggplants in half, top with salt and put them in the oven for 15 minutes. Then Flip them over to roast the other side.
3. Saute the tomatoes and chopped green peppers for 10 minutes.
4. Cook the chicken breasts with 2 cups of water and 1 chopped onion and turmeric. Do not let the chicken broth to evaporate.
5.Now mix the eggplants and sauteed  vegetables with chicken breasts.
5. Add 2 tbs of tomato paste and a bit of saffron and Cover the pan! let the mixture  boil for 20 minutes.
6. Now you should have a mixture like a soup that smells heavenly!


Persian  Snacks
Papioni (Pastry) ,Pistachios, Apricot Chips, Dried Figs and berry.

Papioni(پاپیونی) Pastry recipe:

1. Find Frozen Puff Pastry at any grocery store nearby!
2. Let it thaw and Cut each sheet  in 2 cm wide pieces.
3. Twist each piece like you are making a bow tie.
4. Put them in a oven tray and leave it in the oven for 10 minutes.
5. As you saw the dough has swelled and became fluffy, take it out.
6. Top these beauties with powdered sugar and serve!

Veggie Piroshki and Saffron rice

Chicken Piroshki
Ingredients:Mushrooms, Green pepper, Chopped Chicken breast, Oregano, 3 Blend cheese.
1. Use Tortillas to make these beauties!
2. For the stuffing, you can use any vegetable that you like.
3. Saute chopped mushrooms and  green pepper with olive oil and lemon juice.(Salt and pepper)
4. Add chicken breasts if you want.
5. Put 4 Tbs of the stuffing on the tortilla
6. Add cheese as much as you want. Leave room on the edges and fold the bread. 
7. Rinse your hand and try to close the edges by pushing them on the surface.
8.Put Piroshkis on greased baking paper and leave in in the oven for 20 minutes.
9. Check on them after 20 minutes, if one is side is golden you can flip them over and let it roast.
10. Take them out and leave it for 10 minutes to cool down.
Upside down Saffron Rice Cake
Ingredients:  2 cups of Basmati rice, 2 cups of plain yogurt, saffron
1. Biol 1 liter of water. 
2. Add 2 tbs of oil and salt to the water while boiling.
3. Add two cups of Basmati rice to the boiling water.
4. After 15 minutes. check on it!
5. If the rice is soft enough that you can smash it with fingers, it is ready.
6. Pour it into a basket to let water out.
7. Mix saffron with boiled water and brew it for 10 minutes. Add mixture to  yogurt. Add salt.
8. Heat the pan, pour some oil and add the mixture.
9. Cover the top and let it cook for 30 minutes on medium heat.
10. Let it col down and flip the cake over a serving dish.
11. Add some fresh parsley to garnish!
